Summer Mango Madness Recipe


So... the inspiration of this recipe comes from the summer laziness to make a proper cheesecake, I opened the fridge in a “cheesecake-y” mood and ended up with this.
A few simple everyday summer ingredients to make a refreshing dessert!

Ingredients

  • 2 cups of plain yoghurt
  • 1/2 cup of sugar (depends on the sweetness of the mangoes)
  • 3 mangoes roughly chopped (medium sized)
  • 1/2 teaspoon vanilla essence
  • Crushed digestive biscuits

Method

  1. Blend the yoghurt, sugar, vanilla essence and chopped mangoes together to get a smoothie type consistency.
  2. Carefully make a base layer of the biscuits in the serving glasses and pipe the mango mixture on top of it.
  3. Refrigerate for at least an hour, then enjoy!

Cranberry Granita Shots

Though traditional flavoring ingredients include lemon juice, mandarin oranges, jasmine, coffee, almonds and mint, I have discovered another delicious version of this Sicilian gift to mankind!


Ingredients
  • 2 cups Cranberry juice
  • 1/2 cup of water
  • 2 teaspoons sugar
Method
  1. Pour the juice, sugar and water into a heavy based pot and let it come to a boil.
  2. Then, cool the mixture and pour it into a freezer-friendly tray and freeze for about 2 hours.
  3. Make sure to keep breaking the ice as it sets using a fork to get a better consistency, every 15-20 minutes.

Note : These granite shots can be made in any flavor according to your choice. Just change the juice accordingly.

The Pomegranate Cooler


Okay seriously, it does not get better (or easier) than this.
This drink will literally refresh you in instants!

Ingredients

  • Pomegranate juice
  • Sprite (or 7Up)
  • Lime (thinly sliced)
  • Fresh Mint leaves

Method

  1. Fill one fourth of a glass with the pomegranate juice and then add some ice to it.
  2. Fill the rest of the glass with sprite and garnish with fresh mint leaves and lime slices!!

Note: To make this into an equally delicious cocktail just replace the sprite with vodka! Enjoy!
