So... the inspiration of this recipe comes from the summer laziness to make a proper cheesecake, I opened the fridge in a “cheesecake-y” mood and ended up with this.
A few simple everyday summer ingredients to make a refreshing dessert!
Ingredients
- 2 cups of plain yoghurt
- 1/2 cup of sugar (depends on the sweetness of the mangoes)
- 3 mangoes roughly chopped (medium sized)
- 1/2 teaspoon vanilla essence
- Crushed digestive biscuits
Method
- Blend the yoghurt, sugar, vanilla essence and chopped mangoes together to get a smoothie type consistency.
- Carefully make a base layer of the biscuits in the serving glasses and pipe the mango mixture on top of it.
- Refrigerate for at least an hour, then enjoy!
