Here is a quicker and easier way to make the lemony delight! Some people like to eat them straight out of the oven, other’s like them chilled with a dollop of whipped cream. My personal favorite is warm lemon bars with a lovely scoop of vanilla ice cream!
Ingredients
- 1 1/2 Cups all purpose flour
- 1/3rd Cup butter
- 1/4th Cup caster sugar
- 1/2 Teaspoon baking powder
- 2 Eggs
- Juice and zest of one lemon
- 1/2 Teaspoon vanilla essence
- Icing sugar for dusting
- Preheat the oven to 170 degrees Celsius 10 minutes before baking.
- Combine the flour and softened butter until the mixture resembles breadcrumbs.
- Stir in the caster sugar, baking powder, eggs , lemon juice , zest and vanilla and mix thoroughly.
- Press down in a lightly oiled baking dish and bake for 20-25 minutes or until the surface becomes lightly golden in colour but is still slightly wobbly.
- Remove from the oven , cool and dust with icing sugar!
