These little treats are the perfect blend between a crumbly, buttery cookie and the all-time favourite go-to-dessert, nutella (my gratitude to the wise man who came up with it) that will leave you wanting more!
Ingredients
- 225 gms all purpose flour
- 150 gms butter
- 4 tablespoons caster sugar
- 1 egg yolk
- Vanilla essence
Method
- Sift the flour And sugar in a mixer/mixing bowl.
- Incorporate the butter into the flour to achieve a coarse consistency.
- Now add the egg yolk and vanilla essence and form a pliable dough.( add 1 tablespoon chilled water if required)
- Wrap in cling film and chill and use as required. (let it rest for atleast half an hour)
- Once rested, roll it out on a lightly oiled/ floured surface and cut into desirable shapes using a cookie cutter.
- For each jimmy jam, you will have to cut out the dough twice, once for the lower half and another for the upper half in order to sandwich the nutella as shown in the photos.
- Once you have got your cut outs ready place them on a baking tray over a cookie sheet/greaseproof paper and bake in a pre heated oven for 10 minutes or until golden in colour at 160 degrees Celsius.
- Once they are cooked, let them cool then layer the bottom halves with nutella and top them off with the upper half with a hole in the middle.
- Enjoy!
