Chicken Burritos Recipe


Chicken Burritos my way, Here’s a little Mexican- American treat made by an Indian that you can enjoy for breakfast ,lunch AND dinner! :D

Ingredients
  • 400 grams diced boneless smoked chicken breast (regular chicken breast will also do, but it’ll be less flavorful and will dry out quickly)
  • Tortillas
  • The yoghurt dip from my kebabs recipe
  • 6 medium to large sized tomatoes
  • 300 ml tomato puree (I used the packaged one)
  • 1 large red onion(finely diced)
  • 6 cloves of garlic(crushed)
  • 150 grams of black beans (kidney beans also give a fascinating flavor)
  • 2 green chillies(cut in half)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped Coriander/cilantro for the garnish
Method
  1. Bring water to boil in a heavy based pan and then put the tomatoes into it till the skin starts peeling off at which point take them out and immediately put in cold water to preserve their colour.
  2. Once they are cool, peel them completely and dice them.
  3. Meanwhile, cook the black/kidney beans in a pressure cooker.
  4. In a heavy based non stick pot, heat the oil and add the green chillies and garlic to it.
  5. Then add the diced red onion and cook till it becomes translucent and soft.
  6. Now, add the chopped tomatoes and salt and pepper and let them cook stirring occasionally for about 15 minutes or till they start breaking down and the water is mostly gone.
  7. At this point, add the tomato puree and cook for another 15 minutes.
  8. Now add the black/kidney beans straight from the cooker along with 4 tablespoons of the water they were cooked in and let the sauce simmer.
  9. While the sauce is simmering, in a frying pan, heat some oil and pan fry the chicken with some salt and pepper.
  10. Add the chicken to the sauce, cover it and let it cook for another 10 minutes or until it becomes of a good consistency.
To Assemble the Burritos
  1. Heat a tortilla; spread some of the dip(kebabs recipe) on it.
  2. Now, pour some of the burrito mix onto it , sprinkle some fresh chopped coriander/cilantro and roll it.
  3. Enjoyy!
