Vanilla Cupcakes with Chocolate Icing Recipe


These pretty little treats have been making people happy worldwide since 1796!
One little cupcake is all I need to make my day worthwhile. And you?



Ingredients: (Cupcakes)

  • 1 and 2/3 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 cup icing sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 eggs
  • 1 cup milk
  • 2 teaspoons vanilla extract

Method

  1. Preheat oven to 160 degrees Celsius. Grease cupcake tins. Set aside.
  2. In a bowl, mix together flour and baking powder. Set aside.
  3. In a large microwave-safe bowl, melt butter in the microwave, then Stir in the sugar.
  4. Stir in eggs, milk, and vanilla extract until combined.
  5. Slowly mix dry ingredients into the wet ingredients until no lumps remain. (Don’t worry if the batter becomes thick, its supposed to be that way! )
  6. Divide batter among cupcake tins and bake for 20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool



Ingredients: (Icing)

  • 300 gms dark chocolate
  • 1/2 cup butter(softened)
  • 1/2 cup icing sugar
  • 1/2 cup whipping cream

Method

  1. Melt the chocolate in a microwave or put the chocolate in a bowl over a saucepan of very hot water stirring occasionally.
  2. Beat softened butter on medium speed with an electric or stand mixer. Beat for about 3 minutes until smooth and creamy. Add powdered sugar, cream and melted chocolate and mix until a smooth consistency is achieved.
  3. Let it cool. Then pour into icing bag and pipe onto the cupcakes!
