These pretty little treats have been making people happy worldwide since 1796!
One little cupcake is all I need to make my day worthwhile. And you?
Ingredients: (Cupcakes)
- 1 and 2/3 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 cup icing sugar
- 1/2 cup (1 stick) unsalted butter, melted
- 2 eggs
- 1 cup milk
- 2 teaspoons vanilla extract
Method
- Preheat oven to 160 degrees Celsius. Grease cupcake tins. Set aside.
- In a bowl, mix together flour and baking powder. Set aside.
- In a large microwave-safe bowl, melt butter in the microwave, then Stir in the sugar.
- Stir in eggs, milk, and vanilla extract until combined.
- Slowly mix dry ingredients into the wet ingredients until no lumps remain. (Don’t worry if the batter becomes thick, its supposed to be that way! )
- Divide batter among cupcake tins and bake for 20 minutes or until a toothpick inserted in the center comes out clean. Allow to cool
Ingredients: (Icing)
- 300 gms dark chocolate
- 1/2 cup butter(softened)
- 1/2 cup icing sugar
- 1/2 cup whipping cream
Method
- Melt the chocolate in a microwave or put the chocolate in a bowl over a saucepan of very hot water stirring occasionally.
- Beat softened butter on medium speed with an electric or stand mixer. Beat for about 3 minutes until smooth and creamy. Add powdered sugar, cream and melted chocolate and mix until a smooth consistency is achieved.
- Let it cool. Then pour into icing bag and pipe onto the cupcakes!
