Blueberry and Ricotta Shots


Blueberry and ricotta is an extraordinary combination of flavors. They are two classic ingredients that have given us a variety of absolutely delicious desserts from pancakes to cupcakes and everything in between! =D

Ingredients

  • 1 cup double cream(or whipping cream)
  • 1/2 cup ricotta
  • 1/2 cup cream cheese
  • 3/4th cup icing sugar + 1½ tablespoon extra
  • Frozen blueberries
  • 1 teaspoon vanilla essence


Method

  1. In a large bowl, mix together the cream, cream cheese and ricotta until a smooth consistency is achieved.
  2. Add the vanilla essence and sugar and mix well.
  3. In a saucepan, heat the blueberries with the sugar(1 ½ tablespoon) to get a syrupy consistency from the juices.
  4. Pour the ricotta mixture in small glass(shot glasses) and refrigerate for at least 4 hours or until it sets.
  5. When serving, top the glasses with some of the blueberry syrup and enjoy!
