Blueberry and ricotta is an extraordinary combination of flavors. They are two classic ingredients that have given us a variety of absolutely delicious desserts from pancakes to cupcakes and everything in between! =D
Ingredients
- 1 cup double cream(or whipping cream)
- 1/2 cup ricotta
- 1/2 cup cream cheese
- 3/4th cup icing sugar + 1½ tablespoon extra
- Frozen blueberries
- 1 teaspoon vanilla essence
Method
- In a large bowl, mix together the cream, cream cheese and ricotta until a smooth consistency is achieved.
- Add the vanilla essence and sugar and mix well.
- In a saucepan, heat the blueberries with the sugar(1 ½ tablespoon) to get a syrupy consistency from the juices.
- Pour the ricotta mixture in small glass(shot glasses) and refrigerate for at least 4 hours or until it sets.
- When serving, top the glasses with some of the blueberry syrup and enjoy!
