10 Minute Peri Peri Chicken Wings

This recipe is a result of a craving. Yep! This happened because I craved the Nandos Peri Peri Chicken so much that I actually moved my lazy butt off the bed and went and bought the Nandos Peri Peri marinade sauce from my nearest grocery store. Only for food do I do these crazy things. Sigh. Totally worth it!


Ingredients:

  • Nandos Peri Peri marinade sauce (I used Extra hot, but you can pick according to your spice tolerance level)
  • Olive Oil
  • 2 Cloves of garlic
  • 5 Chicken wings
  • Salt and pepper to taste 
Method:
  1. Marinade the chicken with olive oil, salt and pepper for atleast an hour or two.
  2. In a small bowl, mix 1.5 tablespoon of olive oil with 3 tablespoons of the Nandos sauce.
  3. Heat Some oil in a heavy based griddle pan. Add the garlic to this, and then the chicken wings.
  4. Brush the Nandos sauce oil on all sides of the chicken wings as it cooks. 
  5. Once covered in the sauce, leave to cook for about 8-10 minutes or till the chicken cooks through and enjoy with a chilled beer.


Grilled Pesto Chicken

Alright, so this is a take on a classic italian meal. Easy to make and finger licking good ^_^

For the Chicken

Ingredients:

  • 5 Whole Chicken legs
  • 3 Tablespoons of pesto sauce
  • Olive oil
  • 10 Crushed cloves of garlic
  • 3 Chopped green chillies
  • Salt
  • Pepper

Method:
  1. Marinade the chicken with the garlic, green chillies, salt, pepper and some olive oil for at least two hours. ( You could make incisions on the chicken to allow the marinade to reach the bone)
  2. Heat some more oil in a griddle pan, then place the marinated chicken on it and let it cook through. 
  3. While the chicken is cooking, use a kitchen brush to brush the pesto onto the chicken on both sides.
  4. When cooked, it'll have a beautiful char. Serve hot with fresh sautéed vegetables and a special take on white sauce.

For the Vegetables:

Ingredients:
  • 1 Broccoli
  • 1 packet of Baby Corns
  • 1 packets of Mushrooms
  • Salt
  • Pepper
  • Olive oil
  • 4 cloves of Garlic
Method:
  1. Boil the Broccoli and Baby Corns till they are almost completely cooked but still firm.
  2. Chop all the vegetables and crush the garlic.
  3. Heat some oil in a pan, add the garlic and toss the vegetables in it for about 3-5 minutes, after adding the salt and pepper.
  4. Serve hot as a side to the Chicken

For the Sauce:

Ingredients:

  • 1/2 a packet of mushrooms
  • About 2 cups of already prepared white sauce (See lasagna recipe)
  • 1 Tablespoon of pesto
  • Salt
  • Pepper
  • Oregano to taste
  • Chilli flakes to taste
  • 3 Cloves of crushed garlic 
Method:

  1. In a pan heat the oil and add garlic to it.
  2. Add the mushrooms and herbs and cook until almost all the moisture evaporates from the mushrooms.
  3. Now, add the pesto and mix thoroughly.
  4. Cook for 3-4 minutes and then mix the white sauce through the mushroom mixture.
  5. Your sauce is ready.

Chicken Wonton Soup

As i already said in my previous post, this soup is the ultimate Kill-your-cold-make-you-feel-like-you-can-conquer-the-world soup! One bowl of this beauty will have you out of your bed and dancing around in your room in no time!

For the Wontons follow the chicken dumplings recipe but fold the wrappers in the form of wontons or as shown in the picture.

The Broth:

Ingredients:
  • 500 ml water
  • A few Chicken bones or scraps 
  • 1 celery stick (and a few leaves)
  • 1 onion (peeled and cut in half)
  • Half a carrot
  • 2 mushrooms 
  • Black peppercorns (to taste)
  • Salt 
  • 1 teaspoon dried lemongrass
  • 5-6 cloves of garlic
  • olive oil
  • Spring onions for garnish


Method:
  1. In a non-stick pan, brown the chicken bones/scraps with a little bit of olive oil.
  2. Now, put all the ingredients together in a pressure cooker except the mushrooms and spring onions.
  3. Let them cook on a medium heat for about 15 minutes, then cool the broth and strain it into a heavy based pan.
  4. Put the pan on the stove, and add the mushrooms to this broth and bring it to boil.
  5. Once that is done, switch off the gas and put a lid on the pan to let it rest for about 5-10 minutes.
  6. Strain the broth again onto your wontons into your soup bowl and garnish with chopped mushrooms and spring onions and serve hot!

1. Chicken wonton soup for those nasty colds
Hot and delicious, who doesn’t crave a little chicken soup when you are in your bed-with the annoying cold that refuses to leave? I know i would love Dean Winchester or perhaps Channing Tatum to get it for me when the cold has killed my nose and is conquering my throat!

Works like a charm! Want to emotionally blackmail a foodie? Put a bowl of this piece of heaven in front of them and watch it work its magic. Trust me, its been used countless times by my parents to bribe me into getting vaccinated (I hate injections >.<) and it has worked every single time.




4. Hot chocolate for those cold winter nights
OOOOH! Warm hot chocolate with tiny marshmallows(so you can enjoy one with each sip!!!) and a layer of dark chocolate and Nutella, drizzled with Caramel and topped with chocolate shavings; on those cold nights when you can’t sleep and need incentive to wake up in a few hours and start the madness that has been your day, all over again!




5. The early morning Grilled cheese glory
Ever wake up in the morning and think that nothing can take you away from the love of your bed? Well, i have news for you. A grilled cheese sandwich (OOOOH WITH BITS OF HAM OR SMOKED CHICKEN IN IT!!!) will do the trick. One whiff of this will have you on your toes and convert the crankiest of humans into a morning people!
