Carrot Cake Recipe


Most people flinch at the idea of any kind of vegetable in their cake but wait until you try this one!

Ingredients

  • 1.5 cups of all purpose flour
  • 1.5 teaspoon ground cinnamon
  • 1.5 teaspoon freshly ground nutmeg
  • 1 teaspoon baking powder
  • 3/4th cup sugar
  • 6200ml vegetable oil
  • 2 large eggs
  • 2 cups carrots peeled(and squeezed)

Method

  1. Preheat the oven to 150 C 10 minutes before baking. Lightly oil a cake dish.
  2. Sift the flour, spices and baking powder together in a large bowl. Stir in the sugar and mix together.
  3. Lightly whisk the eggs, and then gradually stir into the flour and sugar mixture. Stir well.
  4. Add the carrots, mix thoroughly, and then pour into prepared cake tin.
  5. Bake for 1.5 hours (or until light and springy to touch)
  6. Remove from oven and let it cool. Serve with cream cheese!
