Most people flinch at the idea of any kind of vegetable in their cake but wait until you try this one!
Ingredients
- 1.5 cups of all purpose flour
- 1.5 teaspoon ground cinnamon
- 1.5 teaspoon freshly ground nutmeg
- 1 teaspoon baking powder
- 3/4th cup sugar
- 6200ml vegetable oil
- 2 large eggs
- 2 cups carrots peeled(and squeezed)
Method
- Preheat the oven to 150 C 10 minutes before baking. Lightly oil a cake dish.
- Sift the flour, spices and baking powder together in a large bowl. Stir in the sugar and mix together.
- Lightly whisk the eggs, and then gradually stir into the flour and sugar mixture. Stir well.
- Add the carrots, mix thoroughly, and then pour into prepared cake tin.
- Bake for 1.5 hours (or until light and springy to touch)
- Remove from oven and let it cool. Serve with cream cheese!
