Lemon Butter Cookies Recipe


Everyone loves a cookie, a little treat for all age groups. So, instead of the regular choco-chip or oatmeal cookies I made a lemon butter one for all the lemon lovers out there! And you can make them as lemony as you like.

Ingredients

  • 1 egg yolk
  • 1/2 teaspoon vanilla essence
  • 1 1/2 cup flour
  • 1/2 cup sugar
  • A pinch of salt
  • Zest of 1 lemon(depends on how lemony you want it)
  • 3/4 cup cold butter (in small pieces)
  • 2 tablespoons caster sugar


Method

  1. In a food processor, pulse together the flour, sugar, and salt.
  2. Add the lemon zest and butter and pulse until coarse crumbs
  3. In a small bowl, beat the egg yolk and vanilla essence and to blend. form. add to the mixture in the food processor and pulse until large, moist clumps form.
  4. Press the dough together and pat into a neat square.
  5. Wrap tightly with cling film and refrigerate for at least 2 hours.
  6. Unwrap the dough and cut into neat ½ inch thick squares hours to 3 days.and let them stand for 10- 15 minutes for them to soften and become pliable.
  7. Roll out the small squares, and if the dough cracks roll again, then cut out cookie shapes of your choice and refrigerate for about 10 minutes for them to become firm.
  8. Line 2 cookie sheets with butter paper and carefully place the cookies on them and bake -for 10-15 minutes or until lightly golden.
  9. Let them cool and then dust with icing sugar and enjoy!
